Cinnamon Roll

Bahan:

  • *Doh roti
  • 250g tepung roti
  • 50g tepung gandum- or cream flour
  • 50g butter- used margerin
  • 200 g (campuran susu segar +1 biji telur)- i used 20g milk powder + water+ egg
  • 6g (2 sudu kecil) dry yeast
  • 1/2 sudu kecil garam
  • 30g gula halus
  • *utk sapu
  • 25g butter lembut
  • *cinnamon sugar
  • 25g walnuts- raisins instead
  • 50g gula halus
  • 1 sudu besar cinnamon powder- or tumbuk halus cinnamon stick
  • 1 sudu besar tepung gandum-opps lupa nak taruk
  • *cheese frosting-i used lemon frosting
  • 25g cream cheese
  • 25g butter
  • 40g gula aising
  • sedikit esen vanila

note: sedap....







  1. uli doh seperti buat roti biasa. masukkan semua bahan dalam BM, select basic bread program (3hr process). selepas 1 jam 45 min keluarkan doh dari BM.
  2. Canaikan doh selebar 20x40 cm . Sapukan dengan butter yang dah lembut . Biarkan 1cm pada bahagian hujung doh tidak disapukan butter
  3. Kemudian letakkan cinnamon sugar tadi.
  4. Lepas tu gulung dan tekan-tekan bahagian tepi biar bercantum seperti dalam gambar. Kemudian bahagikan kepada 16 bahagian
  5. Letakkan bahagian yg dipotong ke atas di dalam bekas atau loyang yang sesuai.
  6. Penaikkan sehingga 2 kali ganda
  7. Sementara itu sediakan frosting. Campurkan semua bahan-bahan untuk frosting. Pukul sehingga licin.
  8. bakar 170 deg C selama 12min , sapukan dgn glazing, bakar lagi 2 min.
  9. Letakkan frosting ketika roti masih panas-panas

  • *glaze-optional
  • 1/2 biji telur
  • 1 sudubesar fresh milk
  • 1 sudu kecil gula
  • *lemon frosting
  • 2 tbs lemon juice
  • 4 tbs icing sugar- lebih kurang
  • kacau dgn sudu sampai jadi paste dan licin.

  • stok:
  • tulang lembu - daging pun boleh
  • 8 cawan air
  • 1 batans serai
  • 1 biji tomato
  • 2 batang celery
  • 1 bungkus rempah tulang adabi
  • 1 cawan bawang merah- atau bawang besar
  • 2 inci halia
  • 5 ulas bawang putih
  • 1/2 sudu kecil ajinamoto
  • garam secukupnya
  • lauk-pauk:
  • perut lembu yg direbus lembut: potong nipis
  • isi daging rebus-potong nipis
  • paru-optional
  • dressing:
  • cili kering serbuk siam- atau 5 biji cili kering di goreng dlm minyak api sedarhana,
    tos dan kisar halus:
  • *bawang putih goreng siam- atau 10 ulas bawang putih, di tumbuk halus, dan goreng dgn 4 sudu minyak denga api pelahan hingga kering. simpan dlm mangkung bersama minyak.
  • cili padi-potong kecil
  • bawang merah goreng
  • asam limau nipis
  • daun ketumbar
  • daun sup
  • daun bawang
  • lobak asin
  • taugeh
* mesti taruk

Cara:

  1. sedia kan stok cam buat sup tulang
  2. masukkan lauk dalam mangkuk.
  3. masukkan dressing. tuangkan stok panas
  4. rasa. tambah garam jika perlu. rasa mesti pedas! masin! masam!panas!

Mini Cheesecake

Ingredients:
200-225g phil cream cheese
100ml sour cream
2 eggs
1/3 cup sugar
1 tbs corn flour
40g cooking chocolate-melted

  1. mix all ingredients with electric mixer on medium speed until well blended. Add eggs; mix well. divide into two
  2. melt chocolate over low powered microwave. stir after it has begin to liquefy
  3. pour melted chocolate into 1 part for chocolate flavour.
  4. Pour into greased SILICON MUFFIN MOULD.
  5. Bake at 160°F for 25 minutes in water bath or until center is set

Basket of Bread

this time using pau recipe by tok ma. baked instead of steam.

Ingredients:
  • 500g bread flour
  • 240 warm sweeten soy milk
  • 35g oil
  • 5g bread improver
  • 60g sugar
  • 1tbs yeast
  • 5g baking powder
  • 1 tbs vinegar
filling :
  • butter + sugar+ raisin + cinnamons powder
  • kaya
  • inti kacang merah
glaze:
  • 1/2 biji telur
  • 1 sudubesar fresh milk
  • 1 sudu kecil gula

method:
  1. Proof the yeast in soy milk,let sit for 10 minutes until foamy
  2. In bread maker, add in flour, sugar, oil, warm milk,bread improver, baking powder and salt
  3. Add in the proofed yeast; select basic bread program (3hr process)
  4. switch on the BM, let it process for 30 mins
  5. after 30 mins, turn off BM, take out dough
  6. Place dough in a large well oiled bowl
  7. Cover, and let rise in a warm spot for 60-90 minutes, or until DOUBLE in size (I like to rise my dough in the oven, just set oven to 200 degrees and warm for 3 minutes, then turn off the heat while you are making the dough, this will create a perfect temperature to raise dough in, and usually takes only 1 hour to rise with oven method).
  8. Punch down dough.
  9. Shape into large balls, and place on a large greased cookie sheet. greased hand with oil to avoid dough sticking when shaping
  10. Cover with a light clean tea towel, and let rise in a warm place for 30-40 minutes, or until almost DOUBLED (warm oven rise should take 30 minutes.
  11. shaped & glazed
  12. bake for 15 min or until cook
note: yup. soft bila panas kalau sejuk keras gak, 3/5 most of them too brown. tp kalau kukus best

Homemade Tempe Batch no: 001

NOTE:
guna tempe starter yg order from
tempeh info
instruction says 1 sk for 300g kacang. BUT I used 1 1/2 sk for 1kg kacang. jadi elok jugak.
as for vinegar 1 sb for 300g kacang
berat kacang=berat sebelum direndam

what i did:
1-rendam kacang 6 jam. buang air.

2-masukkan boiling water dlm pan cukup utk tutup kacang. masukkan kacang. rebus dlm boiling water 15min-step ni utk menyenangkan process buang kulit.kalau tak rebus dulu sesah nak lekang

3-buang air panas

4-masukkan sedikit kacang dlm mangkuk besar, masukkan air sejuk.

5-utk senang kulit menggelupas, guna cheese grater ,amik segenggap kacang..gossok atas grater. coz grater tu kan tajam2..senang nak kluarkkan kulit.

6-bila dah byk kulit terkeluar, bukak pipe laju. dalam bowl tu ..so kulit akan terapung kan..cepat2 u tuang air + kulit. ulang lagi sampai hampir semua kulit keluar.

7-ulang step 5 & 6 sampai 90% kulit terkeluar.selalunya 3/4 kali buang air baru habis.

8-buat la cam tu sampai semua kacang bersih. dan habis

9-pas tu..masukkan lagi boiling water yg baru dlm periuk. masukkan vinegar. masukkan kacang yg bersih td. boil 15 min lg.

10-buang air. step sterusnya elak guna tangan utk pegang kacang. guna spatula bersih.

11-keringkkan kacang. utk cepat guna hairdryer

12- bila kacang dah kering. baru taburkkan tempe starter. kalau kacang kering. serbuk tu senang serata.

13-amik plastik bersih ..tebuk dulu dgn cucuk satay bersih. lubang 1 inch apart.

14-masukkan kacang- buat sampai habis.

15- simpan tempat panas(dlm boiler room) 36 jam. insyaallah jadi

16- jgn letak bertindih. need air to breath. nanti tak hidup lak

Cheesy Bun

Ingredients:

  • 1 cup warm potato water
  • 1 teaspoon sugar
  • 1 tablespoon dry yeast
  • 3/4 cup fresh milk/ soya milk
  • 7 tablespoon sugar (for a less sweeter bun reduce to 4 )
  • 1/4 cup oil
  • 1 teaspoon salt
  • 600g bread flour
  • bread improver (optional)
  • extra flour for kneading

  • 1 cup = 250 ml

    method:

    • boil 1 potato in 1 1/2 cup water until tender. drain , measure 1 cup of water.
    • Proof the yeast in 1 cup warm water with 1 teaspoon sugar; let sit for 10 minutes until foamy
    • In bread maker, add in flour, sugar, oil, warm milk and salt
    • Add in the proofed yeast; mix to create a soft semi-sticky dough that holds around the blade,
    • Knead dough for 10 minutes-using bread maker
    • Remove dough, and let rest on the counter, covered with a clean dish towel for 10 minutes (this is an important step!).
    • Knead the dough gently for few minutes with hands. adding in more flour as needed (do not add in too much as it will create a heavy bun, dough should be semi-sticky.
    • Place dough in a large well oiled bowl
    • Cover, and let rise in a warm spot for 60-90 minutes, or until DOUBLE in size (I like to rise my dough in the oven, just set oven to 200 degrees and warm for 3 minutes, then turn off the heat while you are making the dough, this will create a perfect temperature to raise dough in, and usually takes only 1 hour to rise with oven method).

    Cotton Soft Japanese Cheesecake

    Bahan:(
    recipe calculated for 200gm cheese)
    200gm phil soft cream cheese
    80 ml fresh milk
    40gm butter
    5 eggs
    1 tbs lemon juice
    1/4 tsp salt
    48g plain flour
    16gm corn flour
    104gm sugar
    1tsp lemon juice

    • Melt cream cheese, butter and milk in a double boiler.
    • Cool the mixture
    • Fold in the flours, egg yolks, sugar,lemon juice and mix well
    • Whisk egg white until foamy, then add in 1tsp lemon juice and whisk on the highest speed
    • Add in the sugar gradually and whisk until peaks form
    • using bing spatula very gentle fold in the egg white into the cream cheese mixture.do note over mix
    • Pour into a 8” round cake pan . Line a roasting pan with aluminum foil at the bottom. to be safe use double aluminum foil. Place roasting pan in the preheated oven and pour boiling water into the roasting pan. Water level should be half way of cake pan.
    • 160degC. after 40min cover with aluminum foil. and bake for 1hr 15 min more ( for my oven i only need 120deg C)
    note: soft, light & eggy

    Roti Padat Manis




    Bahan:
    300 g bread flour
    100 g cream flour
    100 gula pasir*
    7 g instant yeast*
    100 ml fresh milk*
    80 ml air*
    32 g telur- pecahkan telur kacau n timbang*
    5 g garam halus
    60 g margarin


    glaze
    lebihan telur
    1 sudubesar fresh milk
    1 sudu kecil gula

    Cara:
    • masukkan semua bahan * & kacau. masukkan tepung dlm BM. masukkan campuran * kedalam tepung.
    • switch on BM. bila hampir sebati,masukkan margarine. etc
    • bakar 12-15 min @ 170. bila roti hampir perang, sapukan dgn glaze. masak lg 1 min.
