Nasi Air


lauk & dressing:
  • isi ayam goreng halia(carik2kan isi ayam yg di rebus, gaul w salt+crushed ginger>>goreng)
  • paru goreng
  • ikan bilis goreng
  • lobak asin
  • bawang goreng
  • bawang putih goreng
  • coriander
  • scallion
  • celery
  • air lada(cili padi+cuka+salt+sugar)
  • asam limau nipis
others:
  • nasi lembik
  • air rebusan ayam (or tulang , daging)

Kuih Seri Muka


Top layer:
  • 100ml air pandan
  • 400ml santan
  • 120gm sugar
  • 2 egg
  • green coloring
  • 1/4 tsp salt
  • 90g plain flour
  • 3 tbs corn flour( or tapioca flour)

Bottom layer:
  • 420g sticky rice
  • water + santan
  • pinch of salt

Sesame tantan mee. japanese style
Bahan-bahan ( 4 serving )

* Mee kuning - cukup untuk 4 serving
* 6 cawan air
* 1 ketul kiub ayam knorr
* a) bahan untuk sesame paste
* - 6 sb bijan putih
* - 3 sb syouyu (kicap jepun)
* - 2 sb gula
* - 2 sb ra-yu (minyak bijan pedas)
* - 1 sb halia cincang
* - 1 sb green onion cincang
* b) bahan untuk "gu"
* - 200gm beef mince
* - 100gm chicken mince
* - 1 sb tou-ban-jyan (boleh ganti dgn cili paste)
* - 2 sb syouyu(kicap jepun)
* - 4 sb ra-yu (minyak bijan pedas)
* - 3 sb minyak masak
* - 2 ulas bawang putih dicincang
* - 1 sb halia cincang
* - 3 sb green onion cincang
* c) bahan untuk hiasan
* - 3 sb bijan hitam
* - shiraga negi (fine strips of white part of long green onion, rinsed in water and drained)
* - mizuna (boleh guna sawi atau spinach yang dicelur)

  1. Untuk sup, didihkan air bersama kiub ayam.
  2. Kisar sesame sehingga halus dengan suri-bachi(seperti dlm gambar), campur syouyu dan gula dan kisar lagi sehingga menjadi paste. masukkan bahan lain di a) dan gaul.
  3. Panaskan minyak dalam chinese wok, goreng daging mince sampai lerai/peroi. Masukkan tou-ban-jyan, syouyu dan ra-yu.
  4. Masukkan garlic, ginger, green onion dan goreng sampai kering air. Ketepikan.
  5. Didihkan air dan celur mee beberapa minit sehingga masak.
  6. Dalam mangkuk besar, letak 1/4 bahagian goma paste, larutkan dengan 1/4 bahagian sup dan masukkan mee.
  7. Topping dengan "gu" dan bahan untuk garnish. tabur bijan hitam yang telah dipecahkan sedikit dengan lesung batu atau "suri-bachi"
  8. note: ra-yu ialah sejenis minyak bijan yang telah ditambah cili. banyak digunakan dalam chinese food. kalau tak ada ra-yu, bolehlah guna minyak bijan biasa dan tambah cili paste mengikut kepedasan yang disukai.

Cookie Dough Cheesecake

Cookie Dough:
1/4 cup butter
1/4 cup brown sugar
1/4 cup sugar
2 tbs water( or coffee or choc.)
1/2 cup plain flour
  1. Beat butter, brown sugar, and sugar until well blended.
  2. Stir in water and vanilla.
  3. Add flour, mix well. Chilled
Choc. Chip Base:
11/2 cup crushed choc chip cookies (or digestive biscuit)
3 tbs butter
  1. melt butter over med heat pan.
  2. add crushed cookies, mix well.
  3. Press into bottom of 9 inch springform pan. chilled for 1 hr.
Cheesecake:
225g phil cream cheese
100ml sour cream
2 eggs
1/3 cup sugar
1 tbs corn flour

  1. cream cheese, sugar and vanilla with electric mixer on medium speed until well blended. Add eggs; mix until blended. Drop 3/4 of the cookie dough balls into batter; stir gently
  2. Pour into base. Dot with the remaining cookie dough.
  3. Bake at 160°F for 45 minutes in water bath or until center is almost set. Cool. Refrigerate 3 hours or overnight.

Kerabu Mangga

Bahan:
  • 350gm manga muda cincang-1 mangga besar
  • 4 tbs udang kering-goreng tanpa minyak,blend kering
  • 3 cili
  • cuka-tak perlu kalau guna mangga masam
  • Kulit limau nipis-potong nipis2
  • garam
  • kacang tumbuk
Cara:
  1. gaul semua bahan dan rasa.

Ikan Talapia Goreng Cili

4 chilies
4 cloves garlic
1 lemon grass
2 tbs fish sauce
seasoning (salt+cornflour)
oil
  1. season fish together with salt+cornflour, > deep fried
  2. chilies, garlics. lemon grass >chopped
  3. tumis> add fish sauce + salt
  4. pour over the cooked fish.

Sticky Rice w Mangoes

In Thai known as KHAO NIAOW MA MUANG
2c sticky rice
31/2c coconut milk(santan)
1/3c sugar
1/2tsp salt
1/2tsp cornflour
  1. soak rice for 4hr, rinse, steam
  2. mix 3cup santan with sugar + 1/4tsp salt. stir in the cooked rice, mix well.
  3. mix 1/2cup santan with cornflour + 1/4tsp salt together in a small pan. bring to a boil, simmer for 2 min.
  4. Place the sticky rice onto serving plate. spoon cornflour sauce over the top & arrange mango slices on th edge.
nb:
like w durian more.

Inti Karipap


4 biji potato(600gm) -diced, goreng medium heat sampai lembut
500 gm minced meat
4 onion (diced)
1 onion-blend
4 garlic-blend
1 tbs jintan manis-blend

3 tbs curry powder
kayu manis
ajinomoto/chicken cube
garam + gula
cara-cara:
tumis bahan kisar, masukkan daging,chopped onion.hingga masak.lastly masukkan perasa+cooked potato,kacau hingga sebati.masak kejap.sejukkan
nb:
tia & adik suka mamam.tak pedas pun

Karipap


1 kg tepung gandum
2 biji telur
1 tbs garam
1 tbs gula
1 cup ais + 250 ml air (secukupnyer)
180 ml veg. oil (panas)


nb:
dough bit lembik. similar to dough kuih gunting. simple yet very nice. not too oily

Sweet Red Bean Paste Filling











momy's version:

1 can red kidney beans-washed,drained & mashed
1/2cup sugar
3 tbs vegetable shortening

Place the puree into a saucepan, together with the sugar and vegetable shortening, and heat over low heat, stirring until it becomes a thick paste. Stir and scrape vigorously so that it does not stick to the bottom. Remove from heat and let cool before filling buns.

Agar -agar santan caramel


agar-agar-washed, soaked for 10min, measure 2 cup
5 cup water
1 cup sugar-buat gula hangus
1cup white sugar
1tsp salt
1 can santan-400ml
2 eggs

Soft Crust Pizza


dough :
450gm plain flour
280 ml water
2 tbs yeast
1 tbs sugar
1 tbs level salt
1 crushed garlic
1 tbs olive oil
all goes into the bread maker


dust dengan tepung(dough ni lembik, need lots of extra flour for dusting)
leperkan dengan tangan
avoid guna rolling pin







letak pre-heated base
cucuk dengan fork



covered with tomato paste
Topping: aubergine,anchovies, tomato,onion, buffalo mozzarella
assemble topping. bake in preheated oven, no more 10-12 min at 180 deg

nb : similar to napoleon style pizza. our family's favorite recipe. soft and chewy base not like other American style pizza

tip sources:
for softer crust, doubling your pans (stacking one on top of another).
the other secret of success is using a pizza stone. put this in the oven when it is cold and then turn your oven onto its hottest temperature. when you are ready to assemble your pizza, roll out the dough and carefully place it on the hot stone. quickly assemble your toppings . place it back in the oven for about 10 minutes and that’s it. i let the stone reheat for the second pizza while we are eating the first.
