Sweetpotato Bun

Bahan-bahan - (10 biji bun kecil) - i made double
  • 135 ml air ais
  • 3/4 cmt garam
  • 30 gm mentega atau marjerin
  • 1/2 biji telur (dipukul sebentar)
  • 60 gm ubi kentang -msk dlm microwave & baru ditimbang-used sweetpotato, doh jadi tesangat la lembik
  • 300 gm tepung roti
  • 3/4 cmb susu tepung
  • 50 gram gula-used 140gm for double
  • 2 cmt yis segera-used 7gm -1 sachet for double
  • bread imrpover
Kastad:
  • 150 ml susu segar
  • 1 ½ sudu besar gula
  • 1 sudu besar tepung kastad
  • 1 sudu kecil esen vanilla


Cara-cara

  1. blend keledek, telur.
  2. Masukkan semua bahan ke dalam breadmaker
  3. Menggunakan program basic bread (3hr). biarkan machine on selama 1 jam 30 min, kluarkan doh dari machine.
  4. bentukkan bulat2 -70gm. doh ni lembih sgt dan melekat kat jari. sentiasa sapu tangan dgn minyak semasa menbetuk2 bulat2.
  5. gris loyang pembakar. susun sampai siap. tutup dgn kain lembap.
  6. panaskan oven 50degC, masukkan loyang yg ditutup dgn kain lembap kedlm oven
  7. perap dlm oven selama 45 min-1hr-double the size
  8. kluarkan dr over. naik kan oven temp to 170degC.
  9. hias bun dgn kastad. bila oven dah cukup panas. masukkan balik roti dlm oven
  10. bakar selama 15-20 min depending on the size.
  11. bila dah masak, sapukan dng butter utk kasi berkilat. tutup dgn kain utk menghasilkan skin yg lembut.
Cara membuat kastad:
  • Campurkan susu, kastad, gula dan vanilla, kacau sehingga sebati
  • Panaskan atas dapur menggunakan api perlahan sambil sentiasa dikacau
  • Kacau sehingga adunan menjadi berkilat (lebih kurang 3-4 min), tutup api dan sejukkan.
Note : moist tapi not light enough: ker sebab doh tu lembik sgt(guna sweet potato) . agaknya klu guna potato ok.???

Roti Canai

Bahan-bahan ( 12 Biji )

  • 550 gm tepung gandum
  • *250 gm air
  • *1 egg-50gm
  • *3 Tbsp condense milk-60gm
  • *1 tsp salt-6gm
  • *1 tsp butter/margerin-15gm: kalau nak yg rapuh, lebihkan butter
  • 1-2 Tbsp tepung gandum-untuk di tambah kalau terlebih lembik semasa menguli

Cara-cara

  1. masukkan bahan * kedalam bekas, kacau hingga sebati
  2. masukkan bancuhan air tadi kedalam tepung.
  3. uli hingga jadi doh
  4. rehatkan doh selama 10min
  5. uli lagi selama 5min
  6. **ulang step 4&5 sebanyak 3 kali.** Noticed-lepas kali ke 3 process uli&rehat, doh bertambah kenyal n tak melekat. so jgn risau kalau 1st process terasa doh melekat di tangan. kalau ranya lembik lg selepas 2nd time uli&rehat, tambah sedikit tepung(1 tbsp)
  7. advisable uli guna tangan-tp nak pakai bread machine pun boleh. Utk bread machine. follow step 1,2,3 diatas. masukkan dlm machine: program basic bread..biarkan process selama 1hr 15min. selalunya doh lembik skit sebab temp bread maker. masa machine pause, kluarkan doh, uli kekejap dengan sedikit tepung. dan masukkan balik dlm machine.
  8. bentuk bulat2. produce 12 depending on the size. salut dgn margerin. perap 3hrs or more .
  9. ambil 4 biji, nipiskan sebesar piring, ketepikan selama 5 min :-utk mengelakkan mengecut bila di tebar. see pic below
  10. ambil satu keping yg telah di nipiskan & diperap, bolehlah di kibar atau di tarik2. utk mengelakkan koyak, tangan mesti sentiasa berminyak. bila dah cukup nipis, renjiskan byk skit minyak, dah lipat. kalau kurang minyak , nanti kering.
  11. panaskan pan dgn api sederhana.. taruk sedikit minyak. masak hingga perang. sambil terbalikkan roti, hendaklam sentiasa di renjis minyak diatas roti.
  12. *doh boleh disimpan dlm fridge up to 2 days
  13. *tips: terlebih uli, doh akan kenyal, dan susah nak kebar. bila masak roti akan kenyal. that's why process uli , rest, di ulang 3 kali.

Banana n' Nutella Crepes

Ingredients:
1 cup plain flour
3/4 cup fresh milk
1/2 cup water
2 eggs
3 tbs vegetable oil or melted butter
salt

other:
Crepe pan set-see picture below

methods:
  • In a large mixing bowl, whisk together the flour and the eggs. Gradually add in the milk and water, stirring to combine. Add the salt and oil, pour into a strainer over a bowl. keep in the fridge for 1 hr. Cook the crepe for about 2 minutes, until the bottom is light brown. Continue until all batter is gone.

Marble Cheesecake

Bahan:
225 g phil soft cheese
3.5 oz susu pekat manis
10 g tepung gandum
26 g choc masakan-melted
1 telur
1 tsp vanilla

Base:
220 g digestive-kisar halus
3 sudubesar margerin-cairk dgn api sederhana, masukkan digestive kisar, kacau serata.

  • griskan bekas 8". tekan campuran biskut & margerin hingga padat. sejukkan sekejap.
  • pukul cheese sampai lembut. masukkan susu pekat, pukul lagi. masukkan telur, pukul, masukkan tepung & vanilla.kacau hingga sebati. asingkan1/3 cwn.
  • cairkan choc, kacau dengan 1/3 cawan adunan hingga rata.
  • ratakan adunan putih. akhir sekali, sudukan adunan choc diatas. marbled- used chopstick
  • bakar 170 hingga set. yg ni nipis jadi 20 min dah masak.

Sambal Belacan

Ingredients:
4 cili besar*
4 cili padi*
1 tbs belacan*
1 tbs sugar*
1 tsp salt*
1/8 tsp ajinomoto*
3 garlics roasted*
1 lime-juice*
lime zest
1/2 onion-roasted & chopped
1/2 tomato-diced

  • In a food processor, mince ingredients marked *. Add remaining ingredients and mix. taste

Beef Skewer

Ingredients:
beef-striped
bambo skewers
freshly ground pepper
fresh rosemary
salt
oliver oil
  • season the beef with salt and freshly ground black pepper to taste. skewer them with bamboo sticks . Pour 2 tablespoons of the olive oil on the beef skewers, lay the rosemary on top of the beef.refrigerate for 30 minutes.
  • over high heat, drizzled frying pan with some oil.place the beef skewers in the pan. cook to desired tenderness.
sauce:
2 tbs butter
1-2 tbs flour
ground pepper
1/4 cup mushroom-chopped
1 large onion-diced
1 tbs pati ayam
water

others:
roast parsnip
roast sweet potatoes
roast garlics
green salad

Savory Crepes

Ingredients:
1 cup plain flour

1 can mushroom-drained well

  • Grease pan with a very small amount of butter. lay flat 1 cepes on the heated pan. Sprinkle with tuna, mushrooms and grated cheese
  • Fold , brush with melted butter. cook till crispy. best served warm

Daging Merah ala Thai

1/2 kg daging-rebus hingga empuk
air utk merebus
pewarna merah
perasa

Sos:
60ml minyak
2 ulang bawang putih-cincang halus
2 tsp belacan*
1 tbs sos ikan*
1 tbs gula*
4 tbs sos tomato*
3 tbs sos cili*
3 tbs air + 1 tbs tepung jagung*
1/2 cup air rebusan daging*

2 labu bawang besar-hiris bulat
2 biji tomamto-belah 6
2 biji cili merah-potong menyerong
2 biji cili padi-dititik
6 tangkai daun bawang-potong 3cm
garam secukupnya

Cara:
  • tumis bawang putih
  • masukkan bahan*. masak hingga pekat

Blueberry Muffin

Bahan:

300gm cream flour
2 tsp baking powder
170 gm gula
200 gm fresh blueberries
250ml buttermilk (i used fesh milk + 2 tbs lemon juice or vinegar)
1/2 cawan butter cair
1 biji telur - whisked till fluffy

Cara:
  • panaskan oven pada suhu 190C
  • satukan tepung , baking powder dan gula di dalam mangkuk besar. asingkan 1 cawan
  • masukkan blueberries, kedalam 1 cawan adunan tepung tadi. kacau sebati supaya ianya bersalut dengan adunan tepung.
  • campurkan buttermilk, butter cair dan telur, gently,kacau dengan spatula or fork sehingga sebati.
  • ayak tepung kedalam liquid mixture- butter, telur,milk
  • kacau dgn fork tetapi jangan overmix nanti adunan jadi keras.
  • masukkan blueberries yg bercampur tapung. kacau perlahan2.
  • letakkan adunan ke dalam acuan muffin dan bakar selama 25 min atau sehingga masak

Vegan Peanutbutter Choc Cake

1 1/2 cawan tepong gandum
1/4 cawan serbuk koko
1 cawan gula (castor sugar)
1 sudu teh baking powder
(Kesemua bahan ini bolehlah disatukan)
1 cawan air
1/3 cawan minyak masak
1 sudu makan cuka
2 sudu makan peanut butter
  • Masukkan kesemua bahan ke dalam bekas adunan (bahan kering dan bahan cairan)
  • Putar/pukul sehingga semua bahan rata dan sebati
  • Masukkan ke dalam acuan yang telah disapu dengan margerin (supaya tak lekat) dan bakar sehingga masak (bila masukkan lidi keluar dgn bersih)
  • Setelah kek masak dan sebelum sejuk bolehah ditaburkan cokolat urai ke atasnya (kalau dah sejuk nanti tak melekat)

Bahan:
1 cup nasi ( gaul dgn 1tsp ragi+1tsp gula,simpan dlm warm place for 48hrs)
2 cup tpg beras
1 cup gula
2 cup air
2 sudu teh eno

Cara:
  • masukkan semua bahan kecuali eno dalam blender. blend sampai hancur.
  • simpan dalam bekas tertutup, perap 6 jam di tempat panas.
  • panaskan steamer. bungkus tutup dgn kain. mengelakkan air menitik atas kuih.
  • bila ready utk di kukus, masukkan eno dalam mixture yg dah di perap tadi, gaul perlahan2.
  • masukkan dalam loyang. kukus selama 45 min.
