Eggless Choc Cake

Bahan-bahan:

3 cawan tepong gandum
1/2 cawan serbuk koko
2 cawan gula (castor sugar)
2 sudu teh baking powder
(Kesemua bahan ini bolehlah disatukan)
2 cawan air
2/3 cawan minyak masak
2 sudu makan cuka
1 sudu teh esen vanilla
  • Masukkan kesemua bahan ke dalam bekas adunan (bahan kering dan bahan cairan)
  • Putar/pukul sehingga semua bahan rata dan sebati
  • Masukkan ke dalam acuan yang telah disapu dengan margerin (supaya tak lekat) dan bakar sehingga masak (bila masukkan lidi keluar dgn bersih)
  • Setelah kek masak dan sebelum sejuk bolehah ditaburkan cokolat urai ke atasnya (kalau dah sejuk nanti tak melekat)

This is our 1st 2007 kuih raya . For our version, momy used veg oil, omitted egg yolk, also add some water to the mixture. so what do you think. shall we make more of these. ohh momy tak sanggup.

3/4 cup icing sugar
1 cup margarine
1 cup maziena (corn flour)
1 egg yolk
enough flour (I used 1 3/4 cups flour)
Jam for filling
Paper cups

  • Beat icing sugar and margarine till light and creamy.
  • Add in egg yolk and continue beating.
  • Add corn flour and mix well.
  • Add in flour, a bit at a time till a soft dough is formed.
  • Roll about 3/4 cm (I rolled about 1/2 cm thick) thick and cut using a round cutter.
  • Spread a bit of jam on top and fold into 2.
  • With two folded pieces, join them together to form a flower shape.
  • Put in small papercups and bake till golden brown

Rendang Ayam

Bahan-bahan:

1 ekor ayam-potong kecil
1 tin santan
10 biji cili padi*
2 inci kunyit hidup*-blend * dgn 1 cup air
1 keping asam
2 batang serai-ketuk
3 helai daun limau purut
1 tbs kelapa kering
garam secukup rasa
1 cup daun pegaga**-byk lg sedap
1 cup daun basil**-optional

  • masukkan semua bahan dlm kuali besar.
  • masak sampai kering. sekali sekala kacau mengelakkan hangit
  • bila hampir kering masukkan **. masak hingga kering

KueyTeaw Goreng

Bahan-Bahannya:-
500 g kuey teow
300 g udang, dibersihkan
200 g kerang
150 g taugeh
1 cawan isi ayam*
1/2 camca teh serbuk lada sulah*
1/2 camca teh garam*(*disatukan dan perap 10 minit)
1 cekak kucai, cuci bersih dan kerat2
3 ulas bawang putih, cincang halus
1 keping fishcake, dihiris halus
3 biji telur
2 camca makan cili kisar
Sedikit daun bawang, dipotong2
Bawang goreng, jika suka

Bahan Sos:*boleh tambah ikut citarasa
2 camca besar sos tiram
2 camca besar sos tomato
2 camca besar sos cili
2 camca besar kicap manis
3 - 4 camca besar kicap cair

Cara membuatnya:-
  1. Dalam kuali panaskan minyak dan goreng telur, hancur2kan dan tolak ke tepi. Masukkan daging ayam, udang, kerang (jika ada) dan fish cake, goreng sekejap dan tolak ke tepi kuali.
  2. Tuang sedikit lagi minyak, tumis bawang putih hingga wangi, masukkan cili dan goreng hingga garing, masukkan bahan2 sos dan gaul hingga rata bersama kesemua bahan yg ditolak ke tepi kuali tadi.
  3. Masukkan kuey teow dan gaul hingga rata. Masukkan kucai dan taugeh tadi, gaul hingga mesra. Rasa garamnya, jika kurang boleh ditambah lagi kicap cair. Bila masak, angkat dan taburkan bawang goreng dan hirisan daun bawang. Hidangkan bersama cili jeruk, hirisan timun dan tomato.

Tepung Pelita

Bahan-bahan ( 20 cups- bergantung kpd saiz bekas )
lapisan bawah:
1 cawan tepung beras
5 cawan jus pandan-4 helai daun pandan blend dgn air
2 tbs tepung jagung
1 tbs air kapur

lapisan atas:
2 sudu besar tepung beras (ratakan)
2 cawan santan (450ml)
1 tbs tepung jagung
1/4 tsp garam
*campurkan semua bahan, masak sekejap atas api sederhana.

  • Tepung, air daun pandan dan air kapur dibancuh hingga sebati.
  • Masakkan tepung yg diadun dan kacau hingga masak dan berkilat.
  • Masukkan adunan yg dah masak dalam jug utk memudahkan masuk dlm acuan.
  • Semasa masih panas, masukkan dlm acuan paras 3/4.
  • Masukkan 1 tbs gula -gula akan cair sbb adunan laspisan atas & bawah yg panas.
  • Bila dah siap, bole sediakan lapisan atas. masukkan aduan atas yg masak dlm acuan hingga penuh.
  • Simpan dalam peti 3-4 jam.

Som Tam

som tam
Serves 2 people
Ingredients
100 g /1 cup green unripe papaya ( use carrot instead)
1 tomatoes, wedges
1 small clove garlic
1 tsp dried shrimp, fried with little oil
1 tsp roasted peanuts
2 fresh birds eye chilies
2 tsp fish sauce
2 tbs lime juice
1 tbs level sugar
fresh long beans, cut into 2 inch
Kangkong

  • Garlic, chili, dried shrimp, & peanuts, pounded coarsely.
  • Transfer the mixture into a big mixing bowl
  • Into bowl, add lime juice, fish sauce,brown sugar
  • Add papaya, tomato wedges, mix well.
  • Adjust seasoning if necessary.
  • It should be mixture of hot, sweet, sour and salty.
  • Served with long beans & kangkong
  • fuuuuuh kepedasan.

Beef Kofta

Ingredients:
Kofta
900g/2lb minced beef
2 onions, finely grated
4 garlic cloves, crushed
2 tsp dried chilli flakes
1 small bunch of flatleaf parsley, chopped
1 teaspoon freshly ground black pepper
1teaspoon ground cumin
1 teaspoon ground coriander
1 egg yolk
oil for brushing
salt & beef stock

  • Put all kebab ingredients into a large bowl and mix thoroughly.
  • With clean, wet hands, roll mixture into balls (approx. size of a golf ball) and then shape into a sausage
  • Slide skewers through the centre, lengthways of each kebab
  • Brush the kofta generously with oil and lightly oil the bars of the barbecue or griddle. Cook for five minutes, turning occasionally, until browned all over and cooked through.




Raita
1/2 cup natural/greek yogurt
¼ cucumber, shredded
1 teaspoons fresh mint leaves, chopped
salt
  • For the minted yoghurt, mix the yoghurt with the mint, half a teaspoon of salt and some pepper and set aside

Salad
1 red onions, sliced
½ cucumber, diced
2 toamtoes, diced
lettuce, diced
fresh coriander, chopped
1 tbs lemon juice
salt&pepper
  • Put these in a bowl with a large pinch of salt and mix together well
Sos
4 tbs tomato kecthup
4 tbs cili sos

Acar Rampai Masak


Bahan tumis:
1 tsp cili boh
2 tbs Sos Cili
Bunga Lawang
Kulit Kayu Manis
3 Bawang putih-jgn hiris
4 Bawang merah-belah 2

Sayur:*
1 Timun
2 Lobak Merah
2 Biji Cili Merah
*Potong panjang2 & rendam dalam air + sedikit garam selama 30 min

Others:
Biji sawi & bijan
2 tbs Gula
1 tsp Garam
3 tbs Cuka
3 tbs air
Minyak utk menumis

Cara-cara:

  • Tumis bahan kisar hingga naik bau. masukkan biji sawi, bawang putih & bawang merah, biarkan 2 min.
  • Masukkan sayur. Gaul seketika.
  • Masukkan cuka, gula dan garam.
  • masuk sedikit air, kacau hingga masak. Tabur sedikit bijan

Ayam Percik

Bahan-bahan:
1 ekor ayam
1 tin santan
2-3 camb pes cili
1 cm belacan
1 camt halba
2 keping asam keping
5 camb gula
garam secukupnya

Bahan kisar:
8 biji bawang merah
2cm halia
3cm kunyit
2cm lengkuas
2 batang serai

1 tbs tepung beras + 4 tbs air

cara:

  • tumis bahan kisar
  • bila kuah setengah pekat, keluarkan asam keping
  • masukkan ayam dan balik2kan hingga 3/4 masak
  • biar kuah atas api perlahan, masukkan bancuhan tepung beras n air
  • panggang ayam dan percikkan kuah diatasnya
  • bila ayam masak, sajikan dengan kuahnya tadi

Buffalo Wings

Buffalo Wing
Bahan-bahan:

8 kepak ayam
5 tbs brown sos
2 tbs tomato sos
1 tbs oyster sos
1 tbs lada hitam-tumbuk
1 bawang putih-tumbuk
1 hiris halia-tumbuk
1 tsp gula
sedikit garam
  • campur semua bahan,tambah gula garam jika perlu. gaul dgn ayam, biarkan 1hr.
  • bakar sampai masak
the next day abih gatal2 badan tia..agaknya sebab brown sos & oyster sos..siannya, bila la tia nak baik..

Sweet n Sour Crispy Duck



Ingredients:
crispy duck:
duck breast-thinly stripped-kulit mesti byk.baru crispy
1 egg
cornflour+ pinch of salt
veg oil

sauce:
3 garlic-chopped
2 red chili
1 onion
4 tbsp thai sweet chili sauce
2 tbsp plum sauce
2 tbsp vegetable oil
sugar & salt to taste
methods:
  • Beat the egg, coat the duck in it, then dip the chicken in the cornflour. Shake off excess then deep fry on high heat until crispy (lama..15min, rasa la, klu x ranggup masuk balik dlm minyak panas :)). Drain and put to one side.
  • In a wok, fry onion, carrot in vegetable oil for 5 minutes. Add chilli and stir for 30 seconds, Thai sweet chilli sauce and sweet & sour sauce, lastly, add duck, stir and serve with egg fried rice.

Kuah Kacang n Nasi Impit


Bahan-bahan:
400gm /3cup salted peanut-tumbuk sampai halus

bahan kisar: ( blend semua bahan-2/3 cup)
5-10 biji cili kering
4 ulas bawang putih
1 bawang besar
4 hiris halia
4 hilis lengkuas
1 senduk minyak
1 batang serai-optional

bahan perasa:
1/2 c dark brown sugar
1/2 c gula
2 tbs air asam jawa ( atau 1 asam keping)
1200ml air
2 tbs gula + 2 tbs garam


cara-cara:
  • panaskan minyak, masukkan bahan kisar, masak samapi wangi
  • masukkan kacang tumbuk. masak 5 min, kacau2.
  • masukkan separuh air, masak sambil kacau selama 1 hr.
  • masukkan selebih air, masak lagi selama 1hr. atau hingga pekat.
  • rasa, tambahkan 2 tbs gula & 2 tbs garam atau mengikut rasa tersendiri
