Kek Lapis Legit

note: SEDAP sangat. cukup manis. LEMAK, LEMBUT. MELT-IN-YOUR-MOUTH. rasa rempah mild. Why is that so?

Bahan:
25 biji telur kuning- med size -(430)gm
5 biji telur putih-(+- 170gm)
500g butter
200g gula
1 sk ovellete
400gm susu pekat*
2 tbs golden syrup*
1 tbs vanilla*
1 tbs mixed spices*-atau lebih
1/2 tsp cream of tatar- 1 pinch
170g cream flour/superfine-ayak

Cara:
  • pukul butter & ovellet sampai kembang, masukkan bahan bertanda * ------(A)
  • pukul telur kuning dgn gula sampai creamy---------(B)
  • masukkan (B) dalam (A), mix well, kaup tepung dalam bancuhan dgn spatula------(C)
  • Pukul putin telur dgn cream of tartar sampai kembang & pekat
  • kacau kaup putih telur dlm (C)
  • grease 8x8" tin. alas dgn grease proof paper
  • 90-100g each layer, grill setiap layer 3min.buat sampai habis.( this one buat 90gm )
  • bila dah siap , tutup dgn alum foil, bakar api atas bawah 180 15-20 min

note:
  • telur kuning mesti betul2 kembang. juga telur putih & butter. basuh pemukul & mangkuk betul2 sebelum pukul bahan2 tadi.
  • masukkan extra pan/mangkok berisi air panas dlm oven bahagian paling bawah-utk meghasilkan wap jd kek lg lembap..temperature grill bergantung pada oven. .Setiap layer masak selama 3-4min.kalau grill terlebih lama setiap lapisan, kek akan jadi KERING & keras. lepas 2/3 layer pandai2 adjust temp/gas mark oven.
  • btw, kek ni tinggi, pan 8x8" hampir penuh.

    p/s : Masa hubby selalu ulang alik ke Medan, dia mesti beli Kek Lapis Zulaikha. Lebih kurang tu lah...mmg sedap. Mmg tip top lah Jo punya lapis !!!

  6. two thumbs up for you Jo of making Lapis legit. I love this cake so much. Every time I went back to Indonesia never forget to buy this cake. BUT to make it myself?? oh boy, it is a lots of work.
