Chicken 'n' Basil Stir-Fry


Bahan-bahan:

500gm ayam-potong kecil
2 tbs cili giling
5 ulas bawang putih-chopped
1 cwn daun basil
1 tbs sos ikan
1/2 tsp belacan
1 tsp garam-secukupnya
1 senduk minyak masak

  • panaskan minyak, goreng ayam sampai kekuningan
  • masukkan cili & belacan ,masak sampai hampir kering
  • masukkan bawang putih & basil
  • masukkan sos ikan, garam
  • masak sampai kering

Mung Bean Pastry

Filling:

1 1/2 cup skinned mung beans -soaked for 2-3 hrs, steamed and blended( 2nd attempt, i used green mung bean & boiled, drain, left to dry overnight & blended)
6 tbsp cooking oil
2 bulb shallot-chopped
1 cup sugar
1 tsp salt
1 tsp grated orange grind

  1. Add sugar, salt the mashed beans.
  2. Heat oil, fry the shoots till lightly brown and fragrant
  3. Pour in the bean mixture. Fry till mixture become dry and able to form into a ball. Divide filling to 25g ball size.

Dough A:
230g flour
110g oil

Dough B:

460g flour
220g oil
180g water
1 tsp vinegar
  1. Mix A, (rest dough for 30 mins, sealed) divide into 10g ball
  2. Mix B, (rest dough for 30 mins, sealed) divide into 25g ball

Step by Step Method:



  1. Brush with egg, top with sesame seeds.
  2. Bake for 180 degree celcius for 20 mins till golden brown

seronok sangat ler ni...la..la..laa..inti tak cantik coz guna kacang hijau yg hijau(ada kulit). keras macam batu..memang susah nak hancur..blend..tapis...blend..tapis...cam nak give up dah..tapi..sabr..sabar...sabar....lepas berjam..jam baru la siap buat filling.lepas ni kalau nak buat lg..kene gak cari skinned mung bean, agaknya yg tu dah lembut skit..nanti la momy try lg. Adik tak makan sgt, Tia macam suka aje. Tak pa la, lg pun cheesecake Adik sorang yg mkn, kakak tak bole ..Tapi Tia pun dah faham apa yg dia allergic to. .siannya

Black Cherry Cheesecake



Choc. Chip Base:
1 cup crushed choc chip cookies
3 tbs butter
  1. melt butter over med heat pan.
  2. add crushed cookies, mix well.
  3. Press into bottom of 6 inch springform pan. chilled for 1 hr
Cheesecake Mixture:
225g phil cream cheese
100ml sour cream
2 eggs
1/3 cup sugar
1 tbs corn flour

  1. blend all ingredient with electric mixer on medium speed until well blended. Add eggs; mix well.
  2. Pour into base.
  3. Bake at 160°F for 45 minutes in water bath or until center is almost set. Cool for 1/2 hr.
Topping:
100ml sour cream
2 tbs sugar
1/2 can black cherry filling
  1. with mixer blend sour cream and sugar.
  2. with spatula spread the mixture over the cake.
  3. bake at 160 for another 10-15 min until set.
  4. cool for 1 hr. lastly decorate with black cherry filling
  5. Refrigerate 3 hours or overnight before serving.

Ayam Percik

sedap & simple..colour termerah, coz kurangkan santan..daddy ckp beessssttttt...!!!!
this time rasa terlebih skit masam..guna tamarind paste..tak reti nak agak..

jun...tak pa ke copy paste..i just hate writing & typing!!!!!!!!!!!

1 ekor ayam

bahan kisar: A
3 batang serai
2 in halia
3 ulas bawang putih
4 biji bawang merah

bahan B:
1 1/2 cawan air asam jawa pekat
7 sudu besar gula
garam

bahan C:
6 sudu besar cili kering kisar
1 cawan santan pekat + *2 tbs tepung beras

tumis A hingga wangi n kering. masukkan gula, air asam..diidhkan. masukkan ayam, kacau. masukkan garam, biar ayam 1/2 masak. masukkan cili kering, kacau hingga mendidih. masukkan santan. biar kuah separuh pekat, keluarkan ayam. masak lagi kuah hingga betul2 pekat, tutp api. curahkan sedikit kuah pada ayam n bakar.

Bahan-bahan ( 5-6 orang )

  • Secekak silom @ selom
  • 2 biji cili merah
  • Sedikit belacan - dalam 2 cubit
  • 4 ulas bawang merah - dimayang halus
  • 2 jemput ikan bilis
  • Garam secukup rasa
  • Cili padi - kalau nak pedas
  • Kelapa parut secukupnya

Cara-cara

  1. Cili merah ditumbuk bersama sedikit garam dan belacan hingga lumat.
  2. Kemudian masukkan ikan bilis dan ditumbuk sedikit, jangan sampai hancur. Cukup setakat untuk pecah2kan ikan bilis sahaja.
  3. Masukkan pula kelapa parut dan ditumbuk ala kadar sahaja. Jangan sampai lumat.
  4. Keluarkan bahan2 yang ditumbuk dari lesung dan masukkan ke dalam bekas @ mangkuk. Campurkan bawang yang telah dihiris dan gaul hingga rata. Ketepikan.
  5. Cuci bersih daun silom dan dipotong halus - macam potong daun bawang/sup.

Ketam Masak Lemak Telur


  • 1 kg ketam
  • 2 cwn air(secukupnya)
  • 1 tin santan
  • 3 helai daun limau purut
  • 2 asam keping
  • 2 biji telur
  • garam
  • ajinomoto
bahan kisar:
  • 4 biji cili api
  • 4 biji bawang merah
  • 2 ulas bawang putih
  • 1 batang serai
  • kunyit
cara-cara:
  1. bersihkan ketam ( jgn potong, masak sekor2 lagi terasa ketam kuahnya)
  2. masukkan bahan kisar & air dlm periuk
  3. masukkan ketam, masak hingga separuh masak.
  4. masukkan santan, asam keping, daun limau purut
  5. pecahkan telur, biarkan 10 sec, then kacau telur perlahan2.
  6. masukkan garam & perasa.
  7. hidang panas2. kalau ketam besar sgt, potong 2 masa nak hidang.

Kerabu Perut

Bahan-bahan:


400 gm perut lembu


bahan giling:
  • 1 tbs kelapa kering
  • 3 ulas bawang merah
  • 5 biji cili
  • 1 biji cili merah
  • 1 inci halia
  • 1 inci lengkuas
  • 1 ulas bawang putih
  • 1/2 tsp belacan

bahan sos:

  • 5 tbsp santan
  • 3 tbs air asam jawa
  • 2 tbs kerisik
  • lime dan garam
others:
  • 1 biji bawang besar
  • serai
  • tauge
